What is Endometriosis?

 In 1985 I was diagnosed with endometriosis. The doctors had no idea why I was having so much pain during my menstrual cycles. This was rare for me since I had never experienced any pain with my menstrual cycles before my breast cancer or during the two long years of chemotherapy. It wasn’t until I had finished my chemotherapy and started getting back on tract with my regular menstrual cycles that I started hemorrhaging and having all kinds of female problems. The doctors decide I needed to have a complete hysterectomy, while they were performing the surgery they discovered I had a real endometriosis problem. The doctors were shocked when they found I was filled with endometriosis my entire stomach cavity and other organs were all involved. It was a long surgery and I had a long recovery time. I will never forget the pain. However, I must say I am so glad the doctors found the endometriosis problem and was able to correct it before the endometriosis was completely out of hand.

Many of us have never heard the word endometriosis nor do we know what it means. This article is for you. If you are having female problems with lots of bleeding and pain ask your doctor to check and see maybe you might have a problem with endometriosis. Hopefully with this article you will find some helpful information about this subject.

Although endometriosis was first identified in the seventeenth century, it wasn't until the late 1920s that the contemporary theory of its cause was born. According to R.F. Valle (International Journal of Gynecology & Obstetrics), endometriosis remains "frustrating for both physician and patient. . . Despite 70 years of theories and experimentation, the cause is not clear, and it is likely that more than one mechanism is at work in most patients".

 Endometriosis is non-malignant and occurs when endometrial cells, normally found only on the inside of the uterus (endometrium), become embedded in locations outside the uterus. Endometriosis occurs in 10 to 15 percent of women between the ages of 25 and 44. Over 5.5 million women in the United States and Canada are affected by endometriosis. An estimated 25 to 50 percent of women suffering from infertility also have
endometriosis.

 Typically, endometriosis occurs in the organs of the female reproductive system, on the ovaries, fallopian tubes and uterus. Other typical sites for endometriosis within the female reproductive system include the vagina, cervix, vulva and ligaments that support the uterus and urinary tract. Information on endometriosis issued by the International Journal of Gynecology and Obstetrics confirms that endometriosis may also occur outside the pelvis, ovaries, uterus and fallopian tubes. Endometriosis can also be found in the intestines and rectum, appendix, diaphragm, lungs, thigh, liver, pancreas, gallbladder, surgical scars, and musculoskeletal and neural systems.

Endometriosis is thought to occur when fragments of endometrial cells, traveling backwards through the fallopian tubes (retrograde menstruation), become implanted ectopically (in abnormal locations) throughout the female reproductive system, or more rarely, elsewhere in the body. Recent information on endometriosis suggests that the endometrial cells are sometimes carried from the uterus via the lymph or blood systems to distant locations in the body. In other cases, tissue outside the uterus spontaneously morphs into endometrial cells in a process known as metaplasia. While these explanations demonstrate how endometriosis may be occurring in the body, no definitive cause or trigger has been identified.

Heredity is a known risk factor. A woman who has a mother or sister with endometriosis is six times more likely to develop endometriosis, compared with the general population. Other risk factors for endometriosis include: early onset of periods, late pregnancy, hormonal imbalance (higher estrogen levels increase the risk) long, heavy periods, and existing problems of the immune system or the female reproductive system, particularly the fallopian tubes, ovaries and uterus exposure to environmental estrogenic toxins.

The following conditions occur more commonly among women with endometriosis than the general public: gastrointestinal disorders, such as diarrhea, constipation and nausea, retroverted uterus (less common) hypothyroidism, fibromyalgia, autoimmune diseases, asthma and allergies including, sensitivity to certain chemicals, chronic yeast infections, and chronic fatigue syndrome.

If you have any of these symptoms contact your physician and have him or her check you. It may be nothing but when you have several of these problems and they seem to get worse instead of better it is time to be checked.

10 Principles for Good Listening

 

Stop talking. This is the first thing to good listening..

Put the talker (person you are listening to) at ease.

Empathize with him. Try to put yourself in his place.

Be patient. Give him plenty of time. Do not interrupt him.

Remove distractions. Don’t doodle, tap or shuffle papers.

Show him that you want to listen. Look and act interested.

Hold your temper. An angry person gets the wrong meaning from words.

Ask questions. This shows your interest and helps to develop points further.

Go easy on argument and criticism. Do Not Argue. This puts him on the defensive.

Stop talking. This is the first and the last rule because all other principles depend on it.

Cancer Fighting Foods and Spices

The National Cancer Institute estimates that roughly one-third of all cancer deaths may be diet related. What you eat can hurt you, but it can also help you. Many of the common foods found in grocery stores or organic markets contain cancer-fighting properties, from the antioxidants that neutralize the damage caused by free radicals to the powerful phytochemicals that scientists are just beginning to explore. There isn't a single element in a particular food that does all the work: The best thing to do is eat a variety of foods. 

The following foods have the ability to help stave off cancer and some can even help inhibit cancer cell growth or reduce tumor size.

Avocados are rich in glutathione, a powerful antioxidant that attacks free radicals in the body by blocking intestinal absorption of certain fats. They also supply even more potassium than bananas and are a strong source of beta-carotene. Scientists also believe that avocados may also be useful in treating viral hepatitis (a cause of liver cancer), as well as other sources of liver damage.

Broccoli, cabbage, and cauliflower have a chemical component called indole-3-carbinol that can combat breast cancer by converting a cancer-promoting estrogen into a more protective variety. Broccoli, especially sprouts, also have the photochemical sulforaphane, a product of glucoraphanin - believed to aid in preventing some types of cancer, like colon and rectal cancer. Sulforaphane induces the production of certain enzymes that can deactivate free radicals and carcinogens. The enzymes have been shown to inhibit the growth of tumors in laboratory animals.  However, be aware that the Agriculture Department studied 71 types of broccoli plants and found a 30-fold difference in the amounts of glucoraphanin. It appears that the bitterer the broccoli is, the more glucoraphanin it has. Broccoli sprouts have been developed under the trade name Brocco Sprouts that have a consistent level of sulforaphane - as much as 20 times higher than the levels found in mature heads of broccoli. 

Carrots contain a lot of beta carotene, which may help reduce a wide range of cancers including lung, mouth, throat, stomach, intestine, bladder, prostate and breast. Some research indicated beta carotene may actually cause cancer, but this has not proven that eating carrots, unless in very large quantities - 2 to 3 kilos a day, can cause cancer.  In fact, a substance called falcarinol that is found in carrots has been found to reduce the risk of cancer, according to researchers at Danish Institute of Agricultural Sciences (DIAS). Kirsten Brandt, head of the research department, explained that isolated cancer cells grow more slowly when exposed to falcarinol. This substance is a polyacethylen, however, so it is important not to cook the carrots.

Chili peppers and jalapenos contain a chemical, capsaicin, which may neutralize certain cancer-causing substances (nitrosamines) and may help prevent cancers such as stomach cancer. 

Cruciferous vegetables - broccoli, cauliflower, kale, Brussels sprouts, and cabbage contain two antioxidants, lutein and zeaxanthin that may help decrease prostate and other cancers. 

Figs apparently have a derivative of benzaldehyde. It has been reported that investigators at the Institute of Physical and Chemical Research in Tokyo say benzaldehyde is highly effective at shrinking tumors, though I haven't seen this report. In addition, the U.S. Department of Agriculture says figs, which contain vitamins A and C, and calcium, magnesium and potassium, may curtail appetite and improve weight-loss efforts. Fig juice is also a potent bacteria killer in test-tube studies.

Flax contains lignans, which may have an antioxidant effect and block or suppress cancerous changes. Flax is also high in omega-3 fatty acids, which are thought to protect against colon cancer and heart disease.

Garlic has immune-enhancing allium compounds (dialyl sultides) that appear to increase the activity of immune cells that fight cancer and indirectly help break down cancer causing substances. These substances also help block carcinogens from entering cells and slow tumor development. Dialyl sulfide, a component of garlic oil, has also been shown to render carcinogens in the liver inactive. Studies have linked garlic — as well as onions, leeks, and chives — to lower risk of stomach and colon cancer. Dr. Lenore Arab, professor of epidemiology and nutrition at the UNC-CH ( University of North Carolina at Chapel Hill ) schools of public health and medicine and colleagues analyzed a number of studies and reported their findings in the October 2000 issue of the American Journal of Clinical Nutrition. According to the report, people who consume raw or cooked garlic regularly face about half the risk of stomach cancer and two-thirds the risk of colorectal cancer as people who eat little or none. Their studies didn't show garlic supplements had the same effect. It is believed garlic may help prevent stomach cancer because it has anti-bacterial effects against a bacterium, Helicobacter pylori, found in the stomach and known to promote cancer there.

Grapefruits , like oranges and other citrus fruits, contain monoterpenes, believed to help prevent cancer by sweeping carcinogens out of the body. Some studies show that grapefruit may inhibit the proliferation of breast-cancer cells in vitro. They also contain vitamin C, beta-carotene, and folic acid.

Grapes, red contain bioflavonoids, powerful antioxidants that work as cancer preventives. Grapes are also a rich source of resveratrol, which inhibits the enzymes that can stimulate cancer-cell growth and suppress immune response. They also contain ellagic acid, a compound that blocks enzymes that are necessary for cancer cells - this appears to help slow the growth of tumors.

Studies show that consumption of green and yellow leafy vegetables has been associated with lower levels of stomach cancer.

Kale has indoles; nitrogen compounds which may help stop the conversion of certain lesions to cancerous cells in estrogen-sensitive tissues. In addition, isothiocyanates, phytochemicals found in kale, are thought to suppress tumor growth and block cancer-causing substances from reaching their targets.

Licorice root has a chemical, glycyrrhizin that blocks a component of testosterone and therefore may help prevent the growth of prostate cancer. However, excessive amounts can lead to elevated blood pressure.

Mushrooms - There are a number of mushrooms that appear to help the body fight cancer and build the immune system - Shiitake, maitake, reishi, Agaricus blazei Murill, and Coriolus Versicolor.  These mushrooms contain polysaccharides, especially Lentinan, powerful compounds that help in building immunity. They are a source of Beta Glucan. They also have a protein called lectin, which attacks cancerous cells and prevents them from multiplying. They also contain Thioproline. These mushrooms can stimulate the production of interferon in the body. Extracts from mushrooms have been successfully tested in recent years in Japan as an adjunct to chemotherapy. PSK is made from the Coriolus Versicolor. Maitake mushroom extract is PCM4.

Nuts contain the antioxidants quercetin and campferol that may suppress the growth of cancers. Brazil nut contains 80 micrograms of selenium, which is important for those with prostate cancer. (Note: Many people are allergic to the proteins in nuts, so if you have any symptoms such as itchy mouth, tight throat, wheezing, etc. after eating nuts, stop. Consider taking a selenium supplement instead or work with someone on how to eliminate this allergy.)

Oranges and lemons contain Iimonene which stimulates cancer-killing immune cells (lymphocytes, e.g.) that may also break down cancer-causing substances.

Papayas have vitamin C that works as an antioxidant and may also reduce absorption of cancer-causing nitrosamines from the soil or processed foods. Papaya contains folacin (also known as folic acid), which has been shown to minimize cervical dysplasia and certain cancers.

Raspberries contain many vitamins, minerals, plant compounds and antioxidants known as anthocyanins that may protect against cancer. According to a recent research study reported by Cancer Research 2001;61:6112-6119, rats fed diets of 5% to 10% black raspberries saw the number of esophageal tumors decrease by 43% to 62%. A diet containing 5% black raspberries was more effective than a diet containing 10% black raspberries. Research reported in the journal Nutrition and Cancer in May 2002 shows black raspberries may also thwart colon cancer . Black raspberries are rich in antioxidants, thought to have even more cancer-preventing properties than blueberries and strawberries. 

Rosemary may help increase the activity of detoxification enzymes. An extract of rosemary, termed carnosol, has inhibited the development of both breast and skin tumors in animals. We haven't found any studies done on humans. Rosemary can be used as a seasoning. It can also be consumed as a tea: Use 1 tsp. dried leaves per cup of hot water; steep for 15 minutes.

Seaweed and other sea vegetables contain beta-carotene, protein, vitamin B12, fiber, and chlorophyll, as well as chlorophylones - important fatty acids that may help in the fight against breast cancer. Many sea vegetables also have high concentrations of the minerals potassium, calcium, magnesium, iron, and iodine.

Soy products like tofu contain several types of phytoestrogens — weak, nonsteroidal estrogens that could help prevent both breast and prostate cancer by blocking and suppressing cancerous changes. There are a number of isoflavones in soy products, but research has shown that genistein is the most potent inhibitor of the growth and spread of cancerous cells. It appears to lower breast-cancer risk by inhibiting the growth of epithelial cells and new blood vessels that tumors require to flourish and is being scrutinized as a potential anti-cancer drug.  However, there are some precautions to consider when adding soy to your diet. Eating up to 4 or 5 ounces of tofu or other soy a day is probably ok, but research is being done to see if loading up on soy could cause hormone imbalances that stimulate cancer growth. As a precaution, women who have breast cancer or are at high risk should talk to their doctors before taking pure isoflavone powder and pills, extracted from soy. 

Sweet potatoes contain many anticancer properties, including beta-carotene, which may protect DNA in the cell nucleus from cancer-causing chemicals outside the nuclear membrane.

Teas: Green Tea and Black tea contain certain antioxidants known as polyphenols (catechins) which appear to prevent cancer cells from dividing. Green tea is best, followed by our more common black tea (herbal teas do not show this benefit). According to a report in the July 2001 issue of the Journal of Cellular Biochemistry, these polyphenols that are abundant in green tea, red wine and olive oil, may protect against various types of cancer. Dry green tea leaves, which are about 40% polyphenols by weight, may also reduce the risk of cancer of the stomach, lung, colon, rectum, liver and pancreas, study findings have suggested.

Tapioca is derived from the cassava plant. It is one of the many plants that manufacture cyanide by producing a chemical called linamarine which releases hydrogen cyanide when it is broken down by the linamarase enzyme. Spanish researches have been studying the cassava and attempting to clone the genes from the plant which are responsible for producing the hydrogen cyanide and then transfer it to a retrovirus. 

Tomatoes contain lycopene, an antioxidant that attacks roaming oxygen molecules, known as free radicals that are suspected of triggering cancer. It appears that the hotter the weather, the more lycopene tomatoes produce. They also have vitamin C, an antioxidant which can prevent cellular damage that leads to cancer. Watermelons, carrots, and red peppers also contain these substances, but in lesser quantities. It is concentrated by cooking tomatoes.  Scientists in Israel have shown that lycopene can kill mouth cancer cells. An increased intake of lycopene has already been linked to a reduced risk of breast, prostate, pancreas and colorectal cancer. (Note: Recent studies indicate that for proper absorption, the body also needs some oil along with lycopene.)

Turmeric (curcuma longa), a member of the ginger family, is believed to have medicinal properties because it inhibits production of the inflammation-related enzyme cyclo-oxygenase 2 (COX-2), levels of which are abnormally high in certain inflammatory diseases and cancers, especially bowel and colon cancer. In fact, a pharmaceutical company Phytopharm in the UK hopes to introduce a natural product, P54 that contains certain volatile oils, which greatly increase the potency of the turmeric spice. 

Turnips are said to contain glucose molaes which is a cancer fighting compound. I haven't confirmed this.

Consumption of fruits and vegetables has been associated with decreased risk of cancers of the colon and rectum.


Important Foods To Better Health

When it comes to food, we can't ignore the facts — or the science. You need a healthy diet for a healthy life.Research shows a healthy diet could help or prevent a number of health problems, including cancer, diabetes, heart disease, and obesity. And that number keeps growing as researchers learn more about how nutrition affects your health.

Follow the Food Guide Pyramid

This guide tells you what foods to include in your diet each day and in what portions. It shows you how to have a balanced diet by eating foods from all the basic food groups:

  • milk, yogurt and cheese (two to three servings; one cup of milk or yogurt would be one serving)
  • meat, poultry, fish, dry beans, eggs, and nuts (two to three servings; one serving would be two eggs, ½ cup of tuna fish, or about ½ of a skinless, cooked chicken breast)
  • fruit (two to four servings; one serving would be a medium-sized apple or banana, ½ cup of canned fruit, or ¼ cup of dried fruit)
  • vegetable (three to five servings; one serving would be ½ cup of raw or cooked vegetables or one cup of raw, leafy vegetables, such as spinach or lettuce)
  • bread, cereal, rice, and pasta (six to 11 servings; a slice of bread, ½ bagel or English muffin, or cup of pasta would be a serving)

Think color

When it comes to fruit and vegetables, eat lots of deep-colored produce. Oranges and dark berries, like blueberries and cranberries, are especially rich in natural plant chemicals that can protect you against diseases like cancer and heart disease, according to the American Dietetic Association. Orange and dark green vegetables, such as carrots, sweet potatoes, and spinach are also rich in these plant chemicals.

Remember fiber

Eating lots of fruits and vegetables will give your body extra water and fiber, which will help keep your digestive tract clean and healthy. Beans, bran, whole-grain breads and brown rice, and high-fiber cereals are also good sources of fiber.

Make good bacteria your friend

Fermented foods like yogurt are especially good for you as you get older because they contain "good" bacteria that keep your digestive tract healthy. Check food labels for these bacteria. They will say "contains active cultures." The more cultures listed, the healthier the food. The good bacteria in these foods also fight the bad bacteria that can enter your body through spoiled food and make you sick.

Eat fatty fish

Your body needs some fats to stay healthy, and the fats found in fish like salmon and tuna are good for your heart. Fish also provides a rich source of protein without the large amount of unhealthy fat you get from red meat.

Try soy

Eating about one to two ounces of soy protein daily can help lower cholesterol and unhealthy fat in your diet and protect you from heart disease. You can find many different soy products, which come from soybeans, in your food store. The most popular are tofu, soy milk (in different flavors), soy burgers and hot dogs, soy ice cream, soy nut butter, and soy flour.

Drink plenty of water

To stay healthy, drink at least eight glasses of water daily. Pay special attention to drinking enough because your thirst decision dulls with age, and remember that if you're thirsty, you're already dehydrated.

Don't abstain if you don't have to

Beer and red wine, in moderation, are another rich source of plant chemicals. This means no more than one glass of beer or red wine a day for women, two for men.

Following a healthy diet, along with regular exercise, will prevent you from gaining weight, which is important for good health. Losing 10 percent of your body weight, for instance, could be enough to lower your cholesterol. Choose healthy foods for a longer and healthier life!


My Run Away Breast Form

Sometimes the things that happen to me are almost unbelievable, but every story I will share with you is true. This story takes place when I was an instructor for a garment factory. We made blue jeans and my job at the time was to help make the new employees feel comfortable as I showed them around the plant. I remember, one day shortly after loosing my breast and coming back to work, how very humiliated I became while showing a group of new employees what their new jobs were all about. Half way through the tour with the 13 new employees I bent over to pick up a few leather patches from a box on the ground to show the employees what they would be sewing. All at once my breast form fell forward coming out of my bra and hitting my chin and bouncing away down the sewing floor. I could feel the heat in my face, embarrassed to death, as several of the new employees said, "What was that thing?" I said, "Oh something I put in my pocket got away." Embarrassed I just knew I couldn't tell them what it really was. It was my right breast form that was in my regular bra the one without the sewed in pockets to hold the breast form securely to my chest wall. I quickly had the new employees watch several of the senior sewing operators while I ran down the aisle to recovery my bouncing breast form. (Back then the breast forms were harder and had a bounce all their own) But before I could get to the missing part of me someone kicked it by mistake, now I was running to chase the form down yet another aisle where two men were standing and talking. The breast form rolled and came to rest at the side of one of the men's shoes. He smile and said, "Is this yours?" My face, now felt like it was on fire. I could feel the heat radiant off my entire body. I said, "Yes, I mean no, well I think so." The man bent down to pick up my breast form which he did not even recognize as such. "He said, here dear this thing is very heavy what are you using this for?" I didn't even answer his question I just ran away as fast as I could. Oh how I wished that I had spent some extra money on a bra made to hold a breast form, at least this wouldn’t be happening. The bra with pockets would have held my breast form securely in place.

I knew I had to get back soon to the new employees that I had left watching other operators sewing. If I went across the large plant to the rest room to put the breast form in my bra it would take me too long to get back. So, I decided to bend down between two large dollies of unsown pants to slip my breast form in place. Well that didn't happen. Just as I was about to slip my breast form into place an operator grabbed the unsown dolly of pants and swing it around bringing it to his machine, when he did my breast form flew out of my hands and again I was chasing it down yet an other aisle but this time it was rolling faster than I could go since there was NO RUNNING in the plant I was walking as fast as I could to reach my breast form before it rolled into the laundry room where there were large tubs filled with pants going into the washing machines to be rinsed and soften. Finally I caught up with the run away breast form and decided to sit down on the floor between two huge laundry tubs to put this thing in place. (Taking a deep breath I said to myself the breast form is finally where it belongs.) As I went to get up I saw the 13 new employees standing all around me. One of the new employees said, "You are a hard person to follow, you zigzag throughout this plant like lightening, and then you just drop out of sight. By the way what in the world were you chasing?" I smiled and said, "It’s a long story, but my mission is finally accomplished. I told the group that they were going to do very well because everywhere I went to hide they seemed to find me. Looks like you will have a good eye for quality too.

I must say that this mishap was embarrassing, it seemed like it took me hours to put myself back together. I knew one thing for sure with the next pay check I was going to buy a bra with pockets so this would never happen to me again. Later that evening when I was sharing this story with my family my eight year old daughter looked up at me and said, "Mommy did you tell the people that you really lost Lucy (that was what the family nick named my first breast form) and you didn’t mean to drop her on the floor?” I told our daughter no, “I didn’t tell anyone about Lucy, it’s only our secret here at home, but one thing for sure, I will never lose my Lucy again.”

Many years have past and Lucy is no longer hanging around our home. She served her purpose but I must say back then the weight and the shape of breast forms were something to be desired. With time, all things do improve and do take on a more realistic shape and eventually have a better appearance. Thank God.

Spring is in the air

Springtime is just around the corner. It is a time for new beginnings. Many of us want to start cleaning out the closets, washing the curtains, getting ready for yard sales and of course plowing the garden and getting the flower beds ready for spring planting.

What about our lives? Do you have your Life and Financial Affairs in order? None of us know when our time here on earth is going to be up, however being ready for life’s unexpected events, and new adventures can be a blessing to not only you but your family members as well. We as humans have a tendency to put off things we know we should do, but don’t really want to.

Believe me getting your life in order is important, not just for you but your family members as well. Many times we talk and share with certain family members or friends our wishes, dreams, plans, or desires, but putting your inner thoughts and wishes in a journal, a will, a living trust, or making sure your attorney is aware of your intentions can be much more clear, especially to others when you are no longer here or able to speak for yourself. (Remember, if it’s not in writing it’s not been said.)

People are different the way they think may be along their own thoughts not of yours. Priority in someone else’s life can get in the way of good judgments, it shouldn’t but it can. Working with people I have seen where hard feelings can and will arise when your intentions were not clearly stated. Save a lot of grief and bad feelings to those who you say you love. Make sure all the family members understand your thoughts and intentions while your still alive, that way when you’re gone there are no misunderstandings or unnecessary intentions for family members to deal with. A death is hard enough on loved ones. I encourage the families whom I work with to do the right thing, even though they share many of their most inner thoughts and desires with me, I strongly suggest they do the things I have mentioned in this article above. TIME and LIFE is a GIFT we must spend it and use it wisely, for what we don’t do today could cost us and our families in the future. Enjoy spring.  ASPARAGUS

What do you know about asparagus? Do you know how to cook and store it, or what to look for when you grow or buy it? This year I promised myself to increase my family’s intake of vegetables. While researching some of the different vegetables and their benefits I found some interesting informational facts. Maybe this information might interest you to.  

1.     Asparagus is sensitive to day and night temperatures.

2.     Did you know that asparagus is a member of the lily family?

3.     A properly farmed asparagus bed generally will produce for 15 -18 years.

4.     There is no fat or cholesterol in asparagus and it is low in sodium and calories

5.     Asparagus picking is done by hand and is also processed by hand not by machine.

6.     Asparagus is grown from a crown root system which is planted about a foot deep.

7.     Asparagus has real health benefits and is a strong vegetable for a good balanced diet.

8.     A bed of asparagus can send up spears for 12-13 weeks during the spring and early summer.

9.     Asparagus is a nutrient strong vegetable high in Folic Acid and is a great source of Potassium, Fiber, Vitamin B6, Vitamins A and C, Thiamine and Glutathione.

10. An asparagus bed should not be harvested for the first 3 years after the crowns have been planted under ground this allows the crowns to develop fully and become stronger.

11. After harvesting is completed in early summer the spears grow out into ferns, and feed off the nutrients that is naturally stored in the crown and root system.

Asparagus can be found in green and white varieties. Green is the most common in the United States, while the white is more popular in Europe. White asparagus is grown under the soil. This does not allow the sun’s rays to penetrate the plant, and therefore it does not produce chlorophyll necessary to produce the green color. White asparagus when eaten raw has a sweet nutty flavor.

When buying asparagus choose firm stalks. The green variety, choose stalks with deep or purplish tips that are closed and compact. Stalks with narrow diameter may be tenderer than the thicker ones.

To store asparagus put a damp paper towel around the bottom of the stalks and place in a plastic bag and place in the coldest part of the refrigerator or in the crisper section of the refrigerator. Really it is best to eat asparagus the day it is purchased, because the flavor lessens with each passing day.

The preparation and cooking of the green variety is easy wash the asparagus in cool running water, snap off the tough ends, can be stir-fried, or lightlysteamed until tender with a little lemon juice. The white variety must be completely peeled no skin remaining, (use a potato peeler) cook until completely tender. Until next month, healthy eating. Moments with Mary.


WHY BANANAS ARE THE NUMBER ONE FRUIT

Recently, I read an article in Dr.Janet Starr Hulls Healthy Newsletter which I receive once a month. I asked the author of the newsletter if I might share these interesting facts about the banana with my readers, she told me to pass it along. Seems everyone is trying to watch their diets and eat better. Hope you and your family will find this information helpful and interesting.

Bananas contain three natural sugars, sucrose, fructose and glucose, and when combined with fiber, bananas produce an instant, sustained and substantial boost of energy. Research has shown that just two bananas provide enough energy for a strenuous 90 minute workout. But energy isn't the only way a banana helps people stay fit. Bananas help prevent a number of illnesses and health conditions.

DEPRESSION: According to a recent survey of people suffering from depression, many felt much better after eating a banana. This is because bananas contain tryptophan, a type of protein the body converts into serotonin, which makes you alert, improves your mood, and generally make you feel happier.

PMS: Forget the pills - eat a banana. The vitamin B6 in banana regulates blood glucose levels, which can affect your mood (among other things).

ANEMIA: Bananas are high in iron, which stimulates the production of hemoglobin in the blood, which helps anemia.

BLOOD PRESSURE: This unique tropical fruit is extremely high in potassium yet low in salt making it the perfect food to lower blood pressure. So much so, the US Food and Drug Administration have permitted the banana industry to officially claim the fruit's ability to 'reduce the risk of blood pressure and stroke.'

CONSTIPATION: High in fiber, bananas in the diet can restore normal bowel movement without laxatives.

HEARTBURN: Bananas have a natural antacid effect in the body, so if you suffer from heartburn, try eating a banana for soothing relief.

MORNING SICKNESS: Snaking on bananas between meals helps keep blood sugar levels up so to avoid morning sickness.

MOSQUITO BITE: Before reaching for the insect bite cream, try rubbing the affected area with the inside of a banana skin. Many people find it amazingly successful at reducing swelling and irritation.

NERVES: Bananas are high in B vitamins that help calm the nervous system.

ULCERS: Bananas can prevent intestinal disorders because of the soft texture and smoothness. It is the only raw fruit that can be eaten without distress in sensitive health situations. It also neutralizes over-acidity and reduces irritation by coating the lining of the stomach.

SEASONAL AFFECTIVE DISORDER (SAD): Bananas help SAD sufferers because they contain the natural mood enhancer, tryptophan.

SMOKING: Bananas can also help people trying to stop smoking. B6 and B12 in bananas, as well as potassium and magnesium, help the body recover from the effects of nicotine withdrawal.

STRESS: Potassium is a vital mineral, which helps normalize the body's heartbeat, sends oxygen to the brain, and regulates the body's water balance. When we are stressed, our metabolic rate raises reducing potassium levels. These levels can be rebalanced by eating a high- potassium banana.

STROKES: According to research in The New England Journal of Medicine, eating bananas as part of a regular diet can cut the risk of death by strokes as much as 40%.

WARTS: If you want to destroy a wart, take a piece of banana skin and place it on the wart (with the yellow side out). Tape the skin in place with a Band-Aid or surgical tape.

ROSE BUSHES: Blend the soft part of the banana skin in a blender full of water and pour on the base of your rose bushes to promote healthy roots and new growth.

Remember, a banana is a natural remedy for many things. When you compare bananas to apples, it has:

* four times the protein

* twice the carbohydrates

* three times the phosphorus

* five times the vitamin A and iron

* twice all other vitamins and minerals

* is rich in potassium

* and is one of the best value foods around

Now ask yourself this question, "COULD A BANANA OR TWO a DAY HELP KEEP ME HEALTHY?" Reminder, research shows that heart disease risk may be reduced by more than 25% among those who eat 10 or more grams of fiber each day. That's three apples a day.
